How common is it that after using treatments such as Ibrance, Kisqali and others, tumors that were initially HR+ HER2 - change and become triple negative?, My question is because I have met several people who, after treatments such as Kisqali, Ibrance, and even normal chemotherapy, develop other tumors, but these change to triple negative.

Yes it is possible. They lose receptors to adapt and resist treatment. Then they’re more aggressive and harder to treat. Unfortunately that’s the result of many many treatments if not all.
